Alfalfa Sprout Salad Sandwich (for 4)

Other Ingredients Needed:
8 slices French bread, toasted
½ cup creamy Ranch-Style Salad Dressing
6 oz imitation crab meat
1 avocado, sliced, brushed with lemon juice
2 eggs, hard boiled, sliced

Step 1:
Arrange 2 slices of bread on four plates.

Step 2:
Combine dressing and crab meat.

Step 3:
Spoon mixture on bread and top with avocado,  alfalfa sprouts and sliced egg.

Gourmet Sprout Salad Pocket (for 4)

Other Ingredients Needed:
8 slices French bread
mayonnaise
1 cucumber, thinly sliced
1 ripe tomato
1 pkg.  Alfalfa sprouts

Step 1:
Spread mayonnaise on bread.

Step 2:
Arrange layers of vegetables and  Alfalfa sprouts.

Hot and Sour Soup

Other Ingredients Needed:
4 cups water
½ lb.  tofu, slivered
2 cups thinly sliced cabbage
2 vegetable bouillon cubes
¾ tsp. salt
1 tbsp. soy sauce
2 tbsp. white vinegar
¼ tsp. cayenne
3 tbsp. water
2 tbsp. cornstarch

Step 1:
Bring 4 cups of water to boil, Add  tofu, cabbage, vegetable bouillon cubes, salt and soy sauce.

Step 2:
Simmer together for 3 minutes.

Step 3:
Add white vinegar and cayenne.

Step 4:
Bring back to boil.

Step 5:
Dissolve 3 tbsp. water with 2 tbsp. cornstarch.

Step 6:
Stir the dissolved mixture into the soup.

Step 7:
Serve garnished with chopped onions and 2 tbsp. Chinese sesame seed oil. (Optional)

Sprout Mountain Sandwich

Other Ingredients Needed:
3 slices cooked bacon
¼ tsp. horseradish
1 tsp. mayonnaise
1 tsp. relish
dash of paprika
croissant(s)
Alfalfa Sprouts
cucumber, thinly sliced
tomatoes, sliced or diced
green onions, chopped

Step 1:
Crumble bacon and mix with horseradish, mayonnaise, relish, and paprika.

Step 2:
Spread the mixture on an open croissant.

Step 3:
Then add layers of  alfalfa sprouts, cucumbers, tomatoes and green onions.

Tofu Fried Rice

Other Ingredients Needed:
4 cups cooled cooked brown or white rice
2 tbsp. oil
2 clover garlic, crushed
¾ lb. diced  tofu
1 tbsp. soy sauce
2 clove minced garlic
1 ½ cups diced onion
1 cup diced celery
1 ½ cups fresh bean sprouts

Step 1:
Heat 1 tbsp. oil and 2 cloves crushed garlic in heavy skillet or wok.

Step 2:
Cook until garlic is light brown, then remove and discard the garlic.

Step 3:
Add diced tofu and stir-fry for 1 minute.

Step 4:
Add 1 tbsp. soy sauce and stir well.

Step 5:
Remove tofu from the pan.

Step 6:
Add 1 tbsp. oil and 2 cloves minced garlic to the pan.

Step 7:
Stir-fry for 1 minute. Add diced onion and diced celery.

Step 8:
Stir-fry 2-3 minutes. Add the cooked rice.

Step 9:
Stir-fry until all mixed. Add diced and fried tofu and fresh bean sprouts.

Step 10:
Heat 1 tbsp. oil and 2 cloves crushed garlic in heavy skillet or wok.

Step 11:
Add 1 tbsp. soy sauce and mix well.

Step 12:
Serve Hot, topped with chopped green onion.

Tofu Cheesecake

Other Ingredients Needed:
1 baked graham cracker pie shell
2 lbs. tofu
1 cup sugar
¼ cup fresh lemon juice
¼ cup oil
½ cup honey
2 tsp. vanilla
pinch of salt

Step 1:
Preheat oven to 375° F.

Step 2:
Blend ingredients in a food processor or blended until smooth and creamy.

Step 3:
Pour this mixture into the baked crust.

Step 4:
Bake for about 40 minutes or until small cracks begin to appear on the surface.

Step 5:
Serve well chilled, topped with fresh or frozen fruit.

Alfalfa sprouts juice

Juicing Alfalfa sprouts can provide great health benefits as well as enable us to cheaply grow our own produce that we can use for juicing. It is incredibly easy to grown our own alfalfa sprouts that will be ready for harvest within days. Sprouts are packed full of nutrients and by growing your own alfalfa sprouts for juicing you can provide yourself will a totally organic, pesticide and herbicide free crop. You can obtain organic alfalfa seeds on-line or from your local health food outlet.

Sprouting your own Alfalfa will also ensure that it is at its freshest when it goes into your juicer as you can juice the alfalfa on the day of harvesting them.

To prepare your sprouts for juicing simply rinse them, drain them and then wrap them up tightly in something like a lettuce leaf. Feed the stuffed lettuce leaf into the juicer. This should help the juicer extract the juice from the alfalfa sprouts more efficiently.

If you are buying alfalfa sprouts look for brightly colored, crisp looking sprouts. The sprout roots should be white whilst the leaves may range in color from yellow to pale green to darker green. The amount of sunlight the leaves have received will determine their color, the more sunlight they receive the darker green they will become.

Only juice mature alfalfa sprouts (which have set 2 leaves). Non-mature sprouts and non-sprouted alfalfa seeds contain the amino acid canavanine. Canavanine can re-trigger autoimmune disease such as rheumatoid arthritis.

Alfalfa sprouts should be stored in the fridge. Avoid sprouts that are turning brown or have dry looking roots, this is a sign that they are past their peak. Another indication of alfalfa being past its optimum condition is if yellowy white water starts to form in the bottom of the container they are being stored in.

Alfalfa sprouts are a good source of protein, calcium, magnesium, potassium, silicon, cobalt and zinc.
